This transformation is an intermediate step in obtaining the most assimilable form by the body: collagen hydrosol.
The so-called “hydrolyzed” collagen is the result of an enzymatic hydrolysis of gelatin. The molecules are split again and therefore even smaller: these are collagen peptides.
